Porcini Mushroom and Truffle Ravioli
Poached Raviolis, Panchetta Wrapped Roasted Asparagus, Sweet Potato Paste, Marsala Glazed Sweet Mandarins
-This dish is unique and a product of my mad scientist habits. After assembled I tasted the dish and discovered a bite of the raviolis, puree and mandarins turned out to contrast one another on the tongue, but affected it in such a way that they flowed together nicely. Lots of sweet, savory and earthy flavors.
